Your First Frying Pan: Nonstick or Stainless Steel?

Comparison guide

Tramontina Signature 10-inch stainless steel frying pan, one of the two individual pans compared here. This is the uncoated 80116/005DS, not Tramontina's similarly named ceramic-nonstick version.

If you mostly cook eggs, pancakes, and quick breakfasts, choose the Tramontina Professional 10-inch nonstick pan. If you want to brown meat, make a pan sauce, and cook a wider range of dinners, choose the Tramontina Signature Tri-Ply Clad 10-inch stainless steel pan. On induction, only the stainless model in this comparison will work.

These are two individual 10-inch frying pans, not cookware sets: Professional 80114/535DS and Signature 80116/005DS. The useful question is how much technique and cleanup you want to trade for an uncoated cooking surface.

For breakfast, nonstick asks less of you

The Professional has a coated aluminum cooking surface designed to release food easily. That makes it our more approachable first purchase for omelets and pancakes, especially if you want to use less cooking fat without making temperature control a project. It is not a promise of oil-free cooking.

Stainless can cook eggs, but it asks more of the cook: gradual preheating, enough fat to coat the surface, and patience before moving food. If your priority is getting breakfast out of the pan with less fuss, buying stainless for its versatility may solve the wrong problem.

The Professional is the coated option. The red sleeve is removable; it does not make the handle heatproof.

For browned bits and pan sauces, choose stainless

The Signature's bare stainless cooking surface is the more useful choice when you want to sear chicken or chops, then turn the browned bits left in the pan into a sauce. A little broth or water can loosen that fond after cooking. Nonstick can brown food too; the reason to choose stainless here is the cooking method, not a claim that the coated pan cannot cook dinner.

The Signature has an aluminum core between stainless layers. That construction helps distribute heat, but it does not remove the need to manage the burner. Tramontina's care instructions call for low to medium stovetop heat for both pans. Neither is an invitation to leave an empty skillet on high.

Cleanup is easier with nonstick; its surface needs gentler treatment

For the Professional, plan on mild soap and water and silicone, nylon, bamboo, or wooden utensils. Its instructions warn against metal utensils, sharp objects, and aerosol nonstick sprays. That is the cost of choosing easier food release: you have to protect the coating.

The Signature has no nonstick coating to preserve, but cooked-on residue can mean more work at the sink. Its care guide recommends a nonabrasive pad and a suitable stainless steel cleanser for stubborn marks. Both are listed as dishwasher-safe; let either pan cool before washing, and hand-wash the stainless pan to help preserve its finish.

Check the stove and oven before buying

The Professional works on gas, electric, and ceramic-glass cooktops, not induction. With its silicone grip attached, its oven limit is 400°F. The manufacturer’s care guide permits 500°F with the grip removed. The Signature works on induction as well as those other cooktops and is oven-safe to 500°F. Use protective mitts for either hot pan.

Skip both 10-inch options if your main job is cooking several large pieces of meat at once without batching. A different surface will not solve an undersized pan.
